Case-based teaching as a didactic tool for understanding food regulation OAK
Smith, Marshall;
With the increasing globalization of food trade and the harmonization of food standards and food safety measures, significant changes in the international and national regulatory frameworks for food have come about as well. And, although there is increasing recognition of the need to integrate and improve coordination of regulatory activities among national and international bodies, food regulation remains complex. Case-based teaching has been demonstrated as an effective educational tool for better understanding food regulation complexities. In this paper, the characteristics of a good case study are delineated, and a hypothesized case of attempting to import a soy milk product into Canada is looked at in detail. The considerations and points highlighted...

Role of English in building a stronger school - wide academic program OAK
Smith, Marshall; Hill, Glen; Campbell, David; Tokioka, Hirozumi;
In academics, English is traditionally viewed as an independent department functioning on its own with little, if any, cooperation or interest coming from non-English-related students and staff of an institution. But with the changing times and increasingly competitive environment that have quite dramatically impacted education in Japan, it may be time to more seriously consider some options for making one’s English program more viable, and even indispensable, to the overall success of a school. Available options include English resource center, language support for research in other departments, networking with other departments, creating more opportunities for improvement of English skills among students and staff, promoting a...

SMITH, Marshall;
Bethel Children’s Home (BCH) is an orphanage, established in 2002 in Myanmar, for orphans, semiorphansfrom underprivileged families, and abandoned children. At the time of initiating this project for BCH, there were 22 children ranging from 5 to 18 years of age living there under the care of house parents. Originally supported by a US aid organization, BCH found it increasingly difficult to operate financially due to the accelerating Myanmar economy driving up the Myanmar currency and commodity prices. Thus, a 5-year project was proposed by the author, in January 2013, to help BCH become financially stable and self-sufficient. The ongoing project entails utilizing the land around BCH for implementing economic activities such as raising milk cows and...

SMITH, Marshall;
Among the nontraditional teaching environments and methods available to improving tertiary education, collaborative learning (CL) seems to have much potential. This paper looks at the research on CL and how it might be able to address education issues such as changing student demographics and the rapid rise in information. In addition, a description and the many significant advantages of employing CL - including a deeper understanding of content, increased overall achievement in grades, improved self-esteem, and higher student motivation - are delineated along with some key elements of CL to help persuade that the method be utilized to its fullest potential. It is recommended that higher education programs that do not currently incorporate CL take...
